King Oyster Mushroom

Common Name: Saesongi Beoseot

새송이버섯

This is the largest of the oyster mushrooms.

It has a thick, meaty white stem and a small tan cap

These mushrooms were not introduced to Korea until 1986. They are sold in both large and small sizes.

Raw, this mushroom has little flavor or aroma, but when cooked develops typical mushroom umami flavors with a texture similar to that of abalone.
