Ingredients
1 small Daikon Radish (8 to 10 ounces)
1 teaspoon sugar
3 tablespoons rice vinegar
1 teaspoon salt
1 teaspoon Fine ground red chili pepper
Procedure
Fine shred the daikon into a mixing bowl.
Sprinkle with salt, mix well, and let stand 10 to 15 minutes.
Rinse in cold water then let drain.
Add all other ingredients and mix well.

Serving size: About 3 ounces.
